Chai masala tea

  • metric measuring spoons and cups
  • pastry brush
  • mortar & pestle
  • sieve
  • bowls – 2 small
  • spatula
  • medium-large saucepan
  • wooden spoon
  • cups

For the Chai masala

  • 1 cinnamon stick
  • 6 green cardamom pods
  • 6 cloves
  • 6 black peppercorns
  • ½ tsp ground ginger

For the Tea

  • 6 tsp black tea leaves
  • 1½ tsp Chai masala
  • 2 cups water
  • 4 cups milk
  • 4 tsp sugar
What to do

  • Set out your ingredients.
  • Remove the tiny black seeds from the cardamon pods and put the seeds in the mortar.
  • Using the mortar, crush the cloves, cardamom seeds, cinnamon, and peppercorns to a fine powder.  Add the ground ginger.
  • Transfer the crushed spices to a large saucepan, add the water, and bring to a boil.
  • Remove the pan from the heat, cover and let steep for 5 minutes.
  • Add the milk and sugar to the pan and bring to a boil.
  • Remove from the heat and add the tea.
  • Cover and let steep for 3 minutes.
  • Stir the chai, then strain it into a warmed teapot then serve in cups.
