Pasta dough

OLYMPUS DIGITAL CAMERAMy good friend Adrienne taught me how to make pasta, and it is her hand-mixing method that I include here. Her daughter, Pia, has been a wonderful mentor in kitchen classes helping other students master the art of pasta-making.  At home this is the method I use but in the school kitchen we use the food-processor method due to time constraints.

Season:  All year

Type:  Big dishes, Pasta

Difficulty:  Easy

Serves:  4 at home, 12 in the classroom

Fresh from the garden:  eggs

Equipment

  • scales
  • medium bowl
  • spoon
  • teaspoon
  • tablespoon
  • food processor, optional
  • plastic wrap
Ingredients

  • 400g plain flour
  • 4 eggs
What to do

  • Set out your equipment and ingredients.

  • Weigh the flour and tip into the bowl of the food processor.
  • Crack the eggs into a bowl.  Check to make sure no bits of shell are in the bowl then add to the bowl of the food processor.pasta blend
  • Pulse-blend until the dough starts to come together.
  • Note: if the dough does not come together add a little bit of water, drop by drop, until it does.
  • Tip the dough onto a clean dry bench and knead for a minute.  If the dough is sticky, add a bit more flour.OLYMPUS DIGITAL CAMERA
  • Wrap the dough in plastic wrap and let it rest for an hour on the bench before using in your chosen recipe.

Hand-mixing method

  • Weigh the flour and tip it out onto your workbench.  Make a hole in the centre of the pile of flour and break the eggs into it.  Using a fork, whisk the eggs, slowly adding flour from the sides as you whisk.
  • After a while it will be easier to use your fingers rather than the fork.  Keep mixing until all the flour has been mixed in and then knead the dough for a couple of minutes until the dough becomes smooth.
  • Wrap the dough in plastic wrap and let it rest for an hour on the bench before using in your chosen recipe.
