Honey and lemon dressing

Ingredients

  • 1 lemon
  • 1½ teaspoon honey
  • 3 tablespoons extra-virgin olive oil
  • sea salt & freshly ground black pepper

What to do

  • Set out the chopping board and knives.
  • Juice half the lemon and tip 1½ tablespoon of the juice into the large bowl.  Stir in the oil and honey and add some sea salt and pepper, then whisk the dressing lightly.
Sweet mustard dressing

Ingredients

  • 3 tablespoons extra virgin olive oil
  • 1½ tablespoons red wine vinegar
  • 3 teaspoons Dijon mustard
  • sea salt and freshly ground black pepper

What to do

  • In the large bowl whisk all the ingredients together.  Have a taste and see if you need to adjust anything.
Verjuice dressing

Ingredients

  • 1 tablespoon verjuice
  • 1 teaspoon lemon juice
  • 3 tablespoons extra-virgin olive oil
  • sea salt & freshly ground black pepper

What to do

  • Juice the lemon and pour into the large bowl.  Add the verjuice and a little sea salt.  Slowly whisk in the oil until blended, then add the pepper.

Asian-inspired Soy & ginger dressing

This Asian inspired salad dressing was given to be by my dear friend Sharnie who has taught me so much about cooking and the love of sharing food.  This dressing is particularly nice with a brown rice salad but goes wonderfully with so many things, such as fish, chicken, vegetables and as here, green salads.

Ingredients

  • 1 clove garlic
  • 1 tablespoon grated ginger
  • 3 tablespoons soy sauce
  • 2 tablespoons lemon juice
  • 3 tablespoons sunflower oil

What to do

  • Peel the garlic and finely chop.
  • Mix all the ingredients together in a bowl and adjust the seasoning if necessary.
